How to Bake Stollen: A Delightful German Christmas Tradition

Looking to bake something special this holiday season? Stollen is a delicious fruit bread enjoyed in Germany at Christmas time. This traditional bread combines nuts, spices, and dried or candied fruit. In this article, we will guide you through the process of baking your own Stollen.

Ingredients You'll Need

Gather these simple ingredients for your Stollen:

  • 500 grams (4 cups) of all-purpose flour
  • 200 milliliters (3/4 cup) of warm milk
  • 100 grams (1/2 cup) of granulated sugar
  • 100 grams (1/2 cup) of unsalted butter, softened
  • 1 teaspoon of active dry yeast
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cardamom
  • 200 grams (1 1/2 cups) of assorted dried or candied fruit (such as raisins, mixed peel, and cherries)
  • 100 grams (1 cup) of chopped nuts (such as almonds or walnuts)
  • Powdered sugar for dusting

Let the Baking Commence!

  1. Dissolve the yeast in warm milk. Ensure the milk is warm, not hot, and let it rest until frothy.

  2. In a large mixing bowl, combine flour, sugar, salt, cinnamon, nutmeg, and cardamom. Mix well.

  3. Add softened butter to the flour mixture and mix until it resembles coarse crumbs.

  4. Pour in the frothy yeast mixture and vanilla extract. Stir until a soft dough forms. If sticky, gradually add more flour.

  5. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

  6. Flatten the dough into a rectangle. Sprinkle the dried or candied fruit and nuts evenly over the dough. Press gently to adhere.

  7. Starting from one of the longer sides, roll the dough tightly into a log shape. Place it seam side down on a parchment-lined baking sheet.

  8. Preheat your oven to 180°C (350°F). Let the Stollen rest in a warm spot for about 30-45 minutes to rise.

  9. Bake the Stollen for approximately 30-40 minutes or until golden brown.

  10. Remove from the oven and cool on a wire rack. Once cooled, dust generously with powdered sugar.

  11. Slice the Stollen and enjoy the flavors and textures. Pair it with a warm cup of coffee or mulled wine for a festive experience.

Now that you've mastered Stollen, share this traditional bread with loved ones. Whether enjoyed on a winter evening or gifted, your homemade Stollen will create moments of joy and celebration.
